Step-by-Step Guide to Making Pomegranate and Pistachio Lokum, a Traditional Yalda Night Sweet

Pomegranate and pistachio Turkish delight is a delicious confection with a texture reminiscent of halva and rahat lokum. Its vibrant flavor makes it a perfect treat to serve during Yalda Night celebrations.

Ingredients:

  • Cornstarch: 1 cup

  • Water: 2½ cups

  • Sugar: 1½ cups

  • Pomegranate juice: 1 cup

  • Pistachio kernels: as desired

  • Rosewater: 2 tablespoons

  • Brewed saffron: as desired

Instructions:

1. Prepare the cornstarch:
Mix the cornstarch with ½ cup of water, stirring well to dissolve any lumps.

2. Make the sugar syrup:
In a suitable saucepan, combine pomegranate juice and sugar over medium heat. Stir until the sugar dissolves and the mixture comes to a boil.

3. Combine cornstarch and syrup:
Slowly add the cornstarch mixture to the boiling syrup while continuously stirring. Reduce the heat and keep stirring until the mixture thickens and becomes translucent.

4. Add flavorings:
Stir in the rosewater and brewed saffron until fully incorporated.

5. Add pistachios:
Gently mix in the roasted pistachio kernels.

6. Mold the Turkish delight:
Pour the mixture into a greased container and smooth the surface.

7. Chill:
Refrigerate for at least 4 hours to allow the Turkish delight to fully set.

8. Cut and store:
Once firm, cut into desired pieces and store in an airtight container.

Tips:

  • For a clearer Turkish delight, add a few drops of lemon juice.

  • Dust with coconut powder or pistachio powder for decoration.

  • You can substitute pomegranate juice with sour cherry or grape juice.

  • For a softer texture, replace cornstarch with wheat starch.
