Step 1: Boil the Potatoes
Peel the potatoes, dice them, and boil with water, salt, and a little oil. Adding salt and oil ensures the potatoes are flavorful even if they crack or absorb water while cooking.

Step 2: Fry the Onions
While the potatoes boil, chop the onions and fry them lightly. Add a pinch of turmeric at the end to give the onions a golden color. If you want to add minced meat, stir it in after frying the onions.

Step 3: Mix Potatoes, Herbs, and Spices
Once boiled and cooled, mash the potatoes and mix with fried onions, chopped herbs, a little salt, pepper, and turmeric. Stir lightly to combine. Be careful not to over-salt, as the potatoes already contain salt.

Step 4: Shape the Samosas
Cut lavash bread according to the desired size: lengthwise for large samosas, crosswise for small ones. Place the filling on one side and fold the bread into a triangle, pressing all edges closed. Moisten dry edges slightly to prevent cracking.

Step 5: Fry the Samosas
Fry the folded samosas in oil about half a centimeter deep, placing them seam-side down. Alternatively, bake in the oven for a healthier option.

Final Step: Drain Excess Oil
After frying, drain excess oil using paper towels or a strainer. Serve with red sauce for added flavor.
