According to the cooking service of Saed News, you’ve probably always heard of spinach in various winter soup recipes. However, this time, you can make a delicious soup with spinach that is just as satisfying as your favorite stews. This soup can be served both as a pleasant appetizer or as a complete meal.
Spinach: 500 g
Medium mushrooms: 10–15
Medium onions: 2
Bone broth: 2 cups
Butter: 30 g
Oats: 1 cup
Water: 2 cups
Milk: 1 cup
Garlic: 3–4 cloves
Salt and black pepper: To taste
Cream: As needed
Step 1:
To make the delicious spinach soup, first wash the spinach and place it in a colander to drain excess water. Then, place the spinach on a cutting board and chop it roughly.
Step 2:
Heat a suitable pan on high heat and let it warm up. Add the spinach to the pan, then immediately reduce the heat and sauté the spinach for about 5 minutes.
Step 3:
After 5 minutes, remove the spinach from the heat and place ice cubes on top of it to prevent it from changing color. Be sure not to cook the spinach for more than 5 minutes to preserve its color.
Step 4:
After 10 minutes, transfer the spinach to a food processor or use an immersion blender to purée it. Next, peel and grate the onions roughly.
Step 5:
In a separate pot, heat on medium and add the butter, letting it melt. Once melted, add the grated onions and sauté them until they become golden and caramelized.
Step 6:
Wash the mushrooms and chop them finely. Peel the garlic cloves and grate them using a fine grater. Add the garlic and mushrooms to the pot with the caramelized onions.
Step 7:
Add black pepper to the mushrooms, then sauté until the garlic aroma is released and the mushrooms are fully cooked. Next, add the bone broth and oats to the pot, mixing them well.
Step 8:
Allow the oats to cook on low heat for 15–20 minutes until tender and slightly sticky. After this time, add the puréed spinach along with salt and milk, stirring until the mixture is well combined and smooth.
Step 9:
Let the soup simmer on low heat for another 5 minutes so that all the ingredients meld together. Once done, turn off the heat and pour the soup into a serving bowl.
Step 10:
Finally, pour some cream into a small bowl and heat it gently on low heat, making sure it doesn't boil or get too hot. Drizzle the warm cream over the soup and serve. Enjoy!
