Potato and mushroom soup is one of Iran’s traditional and delicious soups, prepared in different cities with varying methods and ingredients. This soup has a rich, comforting flavor and can also be served as an elegant starter. The recipe below makes enough soup for four people. To adjust the portion size, simply multiply or divide the ingredients. Follow this guide to make creamy, flavorful potato and mushroom soup.
200 g potatoes
2 onions
500 g mushrooms
1 cup chicken broth
1 lemon
100 g cream
1 tablespoon chopped parsley
1 tablespoon chopped basil
25 g butter
Salt and pepper to taste
Wash and peel the potatoes, then cut them into small pieces. Place the chopped potatoes and chicken broth in a pot and cook over low heat for 20 minutes until tender.
Rinse the mushrooms in cold water, add a squeeze of lemon juice, and chop them. Chop the onions as well.
Melt the butter in a pan, then add the mushrooms and onions. Sauté until the mushrooms release all their water and the mixture is cooked, then remove the pan from heat.
Once the potatoes are cooked, mash them until smooth using a blender. Add the mashed potatoes to the sautéed mushrooms and onions, then stir in the cream. Return the mixture to the heat and bring to a gentle boil.
Serve the soup hot, garnished with chopped basil and parsley.
