Three-Tomato Soup is one of the nourishing and very healthy soups in Iranian cuisine. Not only does it have a wonderful taste, but it’s also highly beneficial for your health. This delicious soup can be served as an appetizer or enjoyed as a light dinner. The ingredients in this recipe are enough to make soup for four people. If you want to prepare a smaller or larger batch, simply adjust the quantities accordingly. Follow this step-by-step guide to make your own Three-Tomato Soup.
Dried tomatoes: ¾ cup
Canned tomatoes: 1 can (800 g)
Large onion, chopped: 1
Low-salt tomato paste: 85 g
Low-salt chicken broth: 400 g
Butter or olive oil: 1 tbsp
Fresh chopped cilantro: 2 tbsp
Fresh chopped celery: ½ cup
Lemon juice: 2–3 tsp
Cream and fresh parsley: for garnish

In a suitable pot, sauté the chopped onion in a little butter or oil for about 10 minutes until golden.
Add half of the dried tomatoes, chicken broth, tomato paste, celery, and canned tomatoes to the onions. Bring the mixture to a boil.
Reduce the heat and let it simmer gently for 20 minutes.
Meanwhile, mix the remaining dried tomatoes with a little water and microwave for 1 minute, then chop them finely.
Transfer the cooked tomato mixture along with the microwaved dried tomatoes to a food processor and blend until smooth to form a puree.
Finally, stir in the lemon juice. Serve the soup garnished with cream and chopped parsley.
