Ingredients for Nectarine Galette with Butter

For the Dough:

  • 1.5 cups of flour

  • 100g of cold butter

  • 2 tablespoons of sugar

  • 4 tablespoons of cold water

For the Filling:

  • 5 nectarines

  • 2 tablespoons of sugar

  • 1 tablespoon of cornstarch

How to Make a Simple and Delicious Nectarine Galette with Butter

  1. Prepare the Filling:

    • Wash the nectarines and slice them thinly, as shown in the images. Sprinkle sugar and cornstarch over the slices, mix well, and set them aside. Allow the nectarines to release some of their juice, then place them in a strainer to remove the excess liquid.

  2. Prepare the Dough:

    • Combine the flour, butter, and sugar in a food processor or mix them well with a fork until the mixture resembles coarse breadcrumbs. Gradually add cold water, mixing gently with a fork or food processor until a soft, smooth dough forms. Wrap the dough in plastic wrap and refrigerate for 30 minutes to rest.

  3. Assemble the Galette:

    • Line a baking tray with parchment paper. Roll out the dough on the parchment into a round shape. Use a fork to poke small holes in the dough to prevent it from puffing up. Arrange the nectarine slices over the dough in a circular pattern, leaving the edges free. Fold the edges of the dough over the nectarines to partially cover them.

    • Brush the folded edges of the dough with an egg yolk mixed with milk. Sprinkle with chopped pistachios or almonds for decoration, if desired.

  4. Bake the Galette:

    • Preheat the oven to 180°C (356°F). Bake the galette for 30–40 minutes, or until the crust turns golden brown. In the last 2 minutes, turn on the grill setting to lightly brown the top. Remove the galette from the oven, let it cool, and carefully lift it off the parchment paper.

Tips for Making a Simple and Elegant Nectarine Galette

  • While the galette is still warm, you can brush the edges of the crust with honey to give it a glossy finish.

  • For electric ovens or toaster ovens, set the temperature to 160°C (320°F).

  • Adding cornstarch prevents the nectarines from releasing too much juice during baking.

Enjoy your homemade nectarine galette!
