For the Tart Base:
1.5 cups of flour
1 cup of coconut powder
3/4 cup of powdered sugar
200g of room temperature butter
3 eggs
1/3 cup of milk
1/2 teaspoon of vanilla
1 pinch of salt
1 teaspoon of baking powder
For the Cream Filling:
2.5 cups of milk
4 tablespoons of cornstarch
100g of whipped cream powder (or cream)
2 tablespoons of rose water
Prepare the Cream Filling:
Start by making the cream filling. Add all the ingredients needed for the cream into a saucepan and mix them together. Cook over medium heat while constantly stirring until the mixture thickens. Set it aside and let it cool down a little.
Prepare the Tart Base:
To make the tart base, beat the butter for about 1 minute until it becomes soft. Add the powdered sugar and beat for 3 minutes until the mixture becomes light and creamy. Add the vanilla and mix.
Now, add the eggs one by one, mixing well after each addition. Finally, add the milk and mix until combined.
Sift the flour, salt, and baking powder three times, then add to the mixture and stir with a spatula until well combined. Add the coconut powder and mix again.
Assemble the Tart:
Take three-quarters of the batter and place it in a piping bag. Grease a removable tart pan and spread the remaining batter evenly inside it. Use the piping bag to fill the edges of the pan.
Pour the cream filling into the center of the tart and spread it out evenly. Using the batter in the piping bag, pipe a diamond or square pattern on top of the tart. Decorate with cherries or sour cherries.
Bake the Tart:
Preheat the oven to 180°C. Place the tart pan in the oven and bake for 20 minutes, or until a clean wooden skewer comes out from the tart. Finally, turn on the grill to lightly brown the top of the tart.
Finishing Touch:
After removing the tart from the oven, allow it to cool slightly. Decorate the top with ground pistachios and cut the tart into slices. You can enjoy it with a little syrup for extra sweetness.
