1 cup of vegetable oil
1½ cups of sugar
2 cups of flour
½ teaspoon of baking soda
1 teaspoon of cinnamon
2½ cups of grated carrots
¼ teaspoon of vanilla
Buttermilk (1 cup of milk mixed with 1 tablespoon of vinegar): 1 cup
Prepare Ingredients: Place all ingredients at room temperature. Preheat the oven to 180°C (356°F). Peel and coarsely grate the carrots and squeeze out the juice by hand. Mix the milk with vinegar and set aside for 10 minutes to curdle, creating buttermilk.
