According to Saed News Family Magazine, vegetarian green bean rice is one of the traditional and delicious Iranian dishes that is very popular. It can be prepared in different ways with a variety of ingredients. This flavorful dish is loved by people of all ages and is quick and easy to make.
Rice: 4 cups
Green beans: 4 cups
Medium carrots: 2
Chopped onions: 2
Large garlic cloves: 2
Turmeric and cinnamon: 1 teaspoon
Tomato paste: 4 tablespoons
Saffron: as needed
Vegetable oil: as needed
Salt and pepper: as needed
Grate the onions and sauté them in a pan with a little oil until golden brown.
Add the chopped green beans and cook for a few minutes until they soften slightly.
Add the spices and dissolved saffron, and sauté with the vegetables for 8–10 minutes.
Stir in the tomato paste and let it simmer lightly.
Cover the pan and cook on low heat for about 2 hours. In the last 15 minutes, add more tomato paste and a little saffron to enrich the color of the sauce.
Rinse the rice thoroughly and soak it in salted water for 2 hours. Boil the rice for 5 minutes, then drain.
For the final step, place your preferred base for the crispy bottom (tahdig) in a pot. Layer the rice and green bean sauce alternately in the pot.
Top the final layer with a little butter and cook for about 1 hour on low heat.
After an hour (or less), your vegetarian green bean rice is ready to serve and enjoy!
