Baghali Tah-Andaz is one of the popular and elegant Iranian dishes, prepared with a variety of ingredients. Below is a complete, step-by-step guide to making this delicious Persian rice dish.

Soaked rice: 2 cups
Dried dill: 3 tablespoons
Broad beans (baghali): ½ cup
Butter and saffron: as needed
Chicken pieces: 2
Salt, black pepper, turmeric, cinnamon: as needed
First, wash the rice and soak it in water with a little salt. Set it aside. Wash the chicken pieces and place them in a bowl. Add the spices, a little saffron, and one chopped onion. Massage well and let the chicken marinate for about 1 hour.
Next, clean and wash the broad beans, or use frozen broad beans if available. Put the rice on heat and allow it to cook until the grains are slightly softened. At this stage, add the broad beans and dried dill to the rice and let everything cook together until the rice is properly softened.
Drain the rice. In the bottom of a suitable pot, add butter, oil, and saffron. Arrange the marinated chicken pieces at the bottom, then pour the drained rice and broad beans over the chicken and level the surface. Sprinkle a little cinnamon on top if desired to reduce the cold nature of the beans. Cover the pot and let it steam for about 40 minutes until the Tah-Andaz is fully cooked. Finally, add a bit more butter and saffron on top and serve with your favorite salad. Enjoy!
Place the chicken pieces skin-side down in the pot for better flavor.
If using large chicken pieces, cook on low heat with a heat diffuser so the chicken cooks thoroughly, or partially cook the chicken before using it.
You can marinate the chicken with garlic and onion if you like.
Fresh dill can be used, but dried dill provides a stronger aroma and flavor.
