How to Make a Delicious Mixed Seasonal Salad Pickle with Tomatoes

According to SAEDNEWS, Many Iranian homemakers make pickles as the cold season approaches, preparing varieties such as seasonal salad pickle with green beans, eggplant pickle, Liteh pickle, Haft Bijar pickle, red cabbage pickle, and more. Mashhadi-style pickle, or seasonal Mashhadi salad pickle, is a popular winter pickle that has its dedicated fans throughout the year. It can be made either with fresh tomatoes (tomato juice) or tomato paste. Below is a step-by-step guide to making seasonal salad pickle.

Ingredients for Winter Salad Pickle with Tomatoes

White vinegar

1 cup per 1 kg of tomatoes

Salt & turmeric

1 tablespoon per 1 kg of tomatoes

Instructions

  1. Chop the tomatoes into large pieces and place them in a plastic container.

  2. Add a little salt to the tomatoes and gently mix them with your hands.

  3. Leave the tomatoes in a cool place for about 15 hours.

  4. After the tomatoes have sat in salt for several hours, strain them and bring them to a boil over heat.

  5. Boil until some of the water evaporates and a semi-thick liquid remains.

  6. Chop the other pickle ingredients, wash them, and place them in a colander to drain excess water.

  7. Add the chopped vegetables to the container with the tomatoes.

  8. Heat the mixture until it starts to boil lightly.

  9. Add seasonings for the seasonal salad pickle: a pinch of turmeric, salt, black cumin seeds, coriander, and Golpar (Persian angelica seeds).

  10. Pour in some vinegar, enough to slightly preserve the consistency without making it too watery.

  11. Once the pickle mixture has cooled, transfer it to the final container and seal the lid tightly.

  12. Allow the pickle to mature for 2–3 weeks before consuming.
