Mashhadi-style pickle, or seasonal Mashhadi salad pickle, is a popular winter pickle that has its dedicated fans throughout the year. It can be made either with fresh tomatoes (tomato juice) or tomato paste. Below is a step-by-step guide to making seasonal salad pickle.

Chop the tomatoes into large pieces and place them in a plastic container.
Add a little salt to the tomatoes and gently mix them with your hands.
Leave the tomatoes in a cool place for about 15 hours.
After the tomatoes have sat in salt for several hours, strain them and bring them to a boil over heat.
Boil until some of the water evaporates and a semi-thick liquid remains.
Chop the other pickle ingredients, wash them, and place them in a colander to drain excess water.
Add the chopped vegetables to the container with the tomatoes.
Heat the mixture until it starts to boil lightly.
