According to the Family Magazine Service of SaedNews, Turkish kebab, or doner kebab, means “rotating and turning kebab” and originates from the city of Bursa, south of Istanbul. Originally, this dish was hung horizontally over charcoal.

Ingredients for Turkish Doner Kebab

  • 500 g minced meat (a mix of lamb and beef)

  • 2 onions

  • 1 tsp garlic puree

  • 1 tsp thyme (not powdered)

  • ½ tsp oregano

  • 1 tsp paprika

  • 1 tsp Aleppo pepper

  • Salt and black pepper, to taste

  • 6 tbsp yogurt

  • 4 tbsp parsley

  • 2 tbsp sumac

  • 1 tbsp mayonnaise

  • 4 pickles

  • 1 tsp garlic powder

  • A little lemon juice

How to Make Turkish Doner Kebab

To make a Turkish doner kebab sandwich, first put the minced meat into a food processor and add one grated onion (with its juice removed). Add the spices: garlic puree, thyme, oregano, paprika, Aleppo pepper, salt, and black pepper (each 1 tsp). To make the meat tender, add 3 tbsp yogurt and mix thoroughly. Once the meat is cohesive, place it on parchment paper and roll both sides to form a sausage shape. The meat should stay in the freezer for at least 6 hours until frozen.

For the sandwich filling, slice one onion into thin strips, then add sumac and 2 tbsp chopped parsley. Mix well and set aside.

For the sandwich sauce, combine 3 tbsp yogurt, 1 tbsp mayonnaise, garlic powder, 2 tbsp chopped parsley, grated pickles, lemon juice, salt, and black pepper, and mix thoroughly.

Next, remove the meat from the freezer, unwrap it from the parchment paper, and slice it very thinly with a sharp knife. Heat a pan with a little oil. Once fully hot, place the meat slices in the pan. Sear each side for 2–3 minutes. Be careful to keep the heat high so the meat does not release water. After the meat is cooked, start assembling the sandwich.

Slice a French baguette or any bread such as Taftoon in half, spread a layer of sauce, then add lettuce and tomato. Place the doner kebab slices and the onion-sumac-parsley mixture in the middle of the bread, add another layer of sauce on top of the meat, and it’s ready.
