Ground meat: 300 grams
Onion: 2
Parsley: 2 sprigs
Chickpea flour: ½ tablespoon
Eggplant: 4
Bell pepper: 1
Large onion: 1
Garlic: 4 cloves
Sumac and garlic powder: to taste
Ginger and pul biber (Aleppo pepper): to taste
Salt and black pepper: to taste
Turmeric and oil: as needed
Step 1:
To prepare this delicious Soorma Kebab, start by peeling and grating one of the onions. Squeeze out the excess juice and place the onion in a mixing bowl along with the ground meat and chickpea flour.
Step 2:
Finely chop the parsley and add it to the bowl. Then season the mixture with salt, black pepper, turmeric, sumac, garlic powder, ginger, and pul biber. Mix everything well until you get a uniform texture.
Step 3:
Take small portions of the meat mixture (about the size of a small tangerine) and shape them into round meatballs. Arrange them on a tray, cover with plastic wrap, and refrigerate for 1 hour.
Step 4:
Meanwhile, roast the eggplants and bell pepper directly over the gas flame until fully charred. Let them cool, peel off the blackened skin, and finely chop them.
Step 5:
Finely dice the remaining onion. Heat some oil in a suitable pan, then sauté the onion until translucent. Grate the garlic into the pan and sauté until fragrant.
Step 6:
Add salt, black pepper, and turmeric to the pan. Then add the chopped eggplant and bell pepper. Sauté everything together for a few minutes.
Step 7:
Remove the tray of meatballs from the fridge. In another pan, heat some oil and fry the meatballs evenly until browned on all sides.
Step 8:
Add the meatballs to the pan with the vegetable sauce and cover with a lid to let the moisture evaporate. If the pan is too dry, add half a cup of water. Allow the sauce to absorb into the meatballs.
Step 9:
Once the sauce is fully absorbed, transfer the eggplant and bell pepper mixture to a serving dish. Place the meatballs on top. Serve this tasty dish with rice or bread.
