Ingredients for Turkish Mini Pide:

  • 1 cup warm milk

  • 1/2 cup vegetable oil

  • 1 tablespoon yeast

  • 1 teaspoon salt

  • 1 tablespoon sugar

  • 4 cups flour

  • 2 egg whites (save the yolks for brushing)

Ingredients for Mini Pide Filling:

  • 150g ground meat

  • 1 onion

  • 1 bell pepper

  • 1 tablespoon tomato paste

  • Olive oil or vegetable oil as needed

  • 1/4 cup chopped parsley

  • Salt, black pepper, and red pepper to taste

How to Make Delicious Mini Pide with Ground Meat:

  1. First, mix the yeast with sugar and warm milk in a bowl. Cover the bowl and let it sit for 10 minutes until the yeast foams and rises. Make sure the milk is warm, meaning it should be warm to the touch but not hot enough to burn your hand.

  2. Separate the egg whites from the yolks. Mix the egg whites with oil and salt using a hand mixer until smooth. Then add the risen yeast mixture and slowly start adding flour. Knead the dough for 10 minutes until you get a smooth and soft dough. Cover the dough and let it rest for 1 hour to let it rise.

  3. Peel and finely chop the onion. Sauté it in a pan until soft and translucent. Add the ground meat, bell pepper, and spices. Stir until the meat is well browned, and the spices release their fragrance. Finally, add the tomato paste and sauté until its raw smell is gone. Once done, add the chopped parsley.

  4. Line a baking tray with parchment paper. Take pieces of dough the size of an egg and place them on the tray. Let them rest for 10 minutes. Then, grease the bottom of a cup and press it into the dough to create a dent. Use a fork to prick the bottom of the dented dough. Then, add the filling mixture on top and press down gently to spread it evenly. Brush with egg yolk and bake in a preheated oven at 180°C for 45 minutes. Enjoy!
