Ingredients for Green Bean Rice with Tahchin Layer (serves 6):
Green Bean Rice Sauce:
Onion: 1, finely chopped
Ghee: 2 tablespoons
Sauté the onion well, then cut 300 g of red meat into small cubes and add it to the onion along with the following spices:
Cinnamon: 2 teaspoons
Turmeric: 1 teaspoon
Salt and black pepper
Continue frying everything for another 10 minutes. If you feel it’s starting to burn, add a splash of water. After 10 minutes, pour in boiling water and let it simmer on low heat with the lid on for 1 hour.
Meanwhile, chop the green beans, sauté them in 1 tablespoon of ghee for 4–5 minutes, then add 7–8 pureed (or grated) tomatoes and let this mixture cook for 1 hour as well. After that, combine the meat sauce and bean-tomato sauce and let them boil together for 10 minutes. Your sauce is ready.
Tahchin (Crispy Layered Rice Cake):
Parboil 5 cups of rice and let it cool. To parboil: cook the rice in salted boiling water for about 7–8 minutes, then drain and rinse briefly with cold water.
For the yellow Tahchin sauce:
2 egg yolks
1 small bowl of thick saffron yogurt
Cinnamon water (or cardamom water or rosewater): 5 tablespoons
Ghee: 3 tablespoons
