Ground meat – 500 grams
Split peas – 1.5 cups

To prepare Shami Kebab Tabrizi, first wash the split peas and soak them in water for about an hour to soften. After soaking, drain them and cook with 2 cups of water and a bit of salt until fully cooked. Once done, drain and mash the split peas using any tool available.
Now add the ground meat, brewed saffron, and spices to the mashed split peas and mix well. Finally, crack in the eggs and mix thoroughly until the mixture becomes uniform and cohesive.
In a frying pan, heat up some oil. Take a small portion of the Shami mixture (about the size of a small tangerine), shape it into a round or oval patty in your hand, and gently place it in the hot oil.
Repeat the process with the rest of the mixture, frying both sides of each patty until golden. Once cooked, transfer the kebabs onto paper towels to remove excess oil.
