Chicken breast and thighs
1 cup of cherries
1 onion
1/4 cup of walnuts
1/2 cup of brewed saffron
2 teaspoons of lemon juice
Salt, black pepper, and onion powder (to taste)
You can use either the chicken breast or fillet in two ways. Either pound the chicken fillet thin, marinate, fill it with the ingredients, and roll it up, or you can use a mixture of boneless chicken breast and thighs, grind it in a food processor or meat grinder, and then mix it with salt, black pepper, saffron, and lemon juice. Let it marinate in the fridge for an hour.
Pit the cherries and cook them in a pot with a little sugar and salt for 10 minutes until they release their juice. Then, separate the cherries from the thickened juice, which will be used for the sauce. Chop the walnuts to your desired size.
Finely slice the onion and sauté it in a pan with a bit of oil until it softens. Add the cherries and walnuts, and sauté for a bit until the ingredients are well combined.
