Window Pane Cookies (also known as Naan Panjerei) Recipe

Window Pane cookies, also known as Naan Panjerei, are one of the traditional and popular Iranian sweets. This delicious cookie is usually made during religious and historical holidays in Iran and is used to serve guests. The process of making these cookies is very simple, and any homemaker can easily make this tasty treat at home. Ingredients for Window Pane Cookies:

  • 1 cup flour

  • 4 eggs

  • 1/4 cup rosewater

  • 1/4 cup milk

  • 1 teaspoon ground cardamom

  • Powdered sugar, as needed

  • Cooking oil, as needed

  • 2/3 cup cornstarch

Method for Making Window Pane Cookies:

  1. Mix the cornstarch with the milk and rosewater until the cornstarch dissolves. Then, add the eggs one at a time, and stir well. Gradually add the sifted flour and mix the dough. Strain the mixture to ensure the dough is smooth and uniform.

  2. In a small pan, heat oil to about half the pan. Heat the cookie mold in the oil, but be careful not to overheat it, as the dough will stick to the mold and won’t come off easily.

  3. Once the mold is warm, dip it into the dough, and then carefully fry it in the hot oil. Be careful not to let the dough stick to the mold. Once it changes color, place the cookies on a paper towel to absorb the excess oil.

  4. Once cooled, mix powdered sugar with cardamom and sprinkle it over the cookies. Then place them in a serving dish.

  • 130 grams of white flour

  • 2 tablespoons of cornstarch

  • 3 to 4 tablespoons of rosewater

  • 5 eggs

  • 2 tablespoons of powdered sugar

  • 1 teaspoon of ground cardamom

Method for Making Window Pane Cookies (Second Method):

  1. In a suitable container, mix the cornstarch with the rosewater until the cornstarch is fully dissolved. Then, add the eggs and mix well.

  2. Mix the white flour with the cornstarch and add to the egg mixture. Stir well with a hand whisk and strain the mixture to achieve a smooth, clear batter.

  3. Heat oil in a pan and let it get very hot. Place the mold in the hot oil and let it warm slightly.

  4. Dip the mold into the batter, ensuring that the batter doesn't stick to the mold. Then, fry the cookies in the hot oil. Once the cookies firm up and become golden, place them on a sieve to drain excess oil. After cooling, mix powdered sugar and cardamom, then sift it over the cookies.
