With Nowruz (Persian New Year) approaching, it's time to start baking sweets. Today, I’m here to teach you how to make coconut cookies. Coconut cookies are very popular among the New Year's sweets, but making them can be a bit tricky! However, in this method, we can make coconut cookies without heating the mixture, resulting in cookies with a cracked surface and a soft, chewy texture. With these dry cookies, you can host your guests or enjoy a gathering, and they pair perfectly with a cup of tea.
Ingredients:
100g of high-fat desiccated coconut
70g egg white
160g powdered sugar
A pinch of vanilla
1 tablespoon lemon juice
75g hot oil
Preheat the oven to
160°C (for gas ovens) or 145°C (for electric ovens) and bake for 15-20 minutes.
