According to Saeed News cooking service, Kurdistan is known for its delicious traditional foods, and Perpoleh soup is one of the best examples. This soup is rich in fiber and plant-based protein.

Soup is one of the traditional Iranian dishes. There are various types of soups, and depending on the ingredients and the region, they have different names. One of these soups is Lentil Noodle Soup, which is considered a traditional dish from Sanandaj and Kurdistan.

Local Soup

This soup is made from lentils and noodles, and it is easy to prepare. Lentils cook quickly, making the preparation time for this soup relatively short. It uses either special soup noodles or homemade noodles that are finely chopped. Depending on personal preference, you can also add whey to the soup.

Ingredients for 4 people:

  • Small lentils: 2 cups

  • Soup noodles: 1 cup

  • Onion: 1

  • Tomato paste: 1 tablespoon

  • Oil: as needed

  • Salt: as needed

  • Black pepper: as needed

  • Water: 4 to 5 cups

  • Mint, thyme, and oregano: as needed

Recipe for Lentil Noodle Soup:

  1. First, wash and peel the onion. Then, heat a pot with a little oil and sauté the onion until it becomes soft and translucent.

  2. Grate the garlic finely and add it to the onions, stirring. Grate fresh ginger and add it to the mixture, continuing to sauté. Then add the tomato paste and sauté further.

  3. Add the mint, thyme, and oregano, and sauté until the herbs release their aroma. Wash the lentils and soak them in water for a few hours before draining and adding them to the onion mixture.

  4. Add water or beef broth, cover the pot, and let it simmer gently. Using beef broth enhances the flavor of the soup. Once the lentils are cooked, chop the soup noodles finely and add them to the soup.

  5. Add salt, black pepper, and any other preferred spices, stir, and cover the pot again, letting the soup cook slowly until it thickens. You can also add whey to the soup if desired.
