Eggs: 4
Sugar: 200g
White pastry flour: 280g
Butter: 100g
Milk: 250ml
Lotus cream: 2 tbsp
Baking powder: 2 tsp
Vanilla: ½ tsp
To make this delicious cake, first, place the eggs, sugar, and vanilla in a suitable bowl and beat them with an electric mixer on high speed for 5 minutes until the mixture becomes light-colored and fluffy.
Next, mix the butter (at room temperature), milk, and Lotus cream in a saucepan and heat it on the stove until it becomes warm and fully combined. Then, immediately add this warm mixture to the egg and sugar mixture and continue mixing for 1 minute on high speed until everything is well incorporated.
Gradually add the sifted flour and baking powder (which has been sifted three times) to the batter, and mix in one direction with a spatula or hand mixer until the ingredients are evenly combined.
Pour the batter into a 25 cm cake pan and bake in a preheated oven at 180°C for 45 minutes until the cake is fully cooked and rises.
Once baked, remove the cake from the oven and allow it to cool completely before removing it from the pan. Decorate the cake with warm Lotus cream (melted over a steam bath) on top.
Bring ingredients to room temperature: Ensure that all ingredients are at room temperature before starting. For example, take out the eggs, butter, and other ingredients at least 30 minutes before use. Additionally, always sift the flour and dry ingredients three times before adding them to the batter.
Precise oven temperature: Accurate oven temperature is crucial. Make sure your oven is preheated to the exact temperature mentioned in the recipe. If you're not sure about your oven’s accuracy, it's helpful to use an oven thermometer. If you’re using a gas oven without a thermometer, add about 10°C more than the stated temperature.
Use a digital scale: For precise measurement of ingredients, using a digital scale is highly recommended. This ensures that the cake’s texture and consistency are perfect.
Beat eggs carefully: Always scrape down the sides of the bowl while beating the eggs to ensure all the egg mixture is incorporated. This prevents any uncooked eggs from affecting the flavor.
Choose the right pan: Ensure that the pan size is suitable for the recipe. If it’s too large or small, the cake will not bake evenly. Always leave about 1/3 of the pan empty when filling it with the batter.
Pan material matters: Use high-quality pans. Galvanized pans are a good and affordable option for baking cakes, and they are widely available.
Don't open the oven too early: Avoid opening the oven within the first 30 minutes of baking to prevent the cake from collapsing.
Use high-quality ingredients: Using premium quality ingredients will ensure the best results. For example, if the cake turns out dense or tough, it might be because the flour wasn't of good quality.
