Ingredients for making Fereni with rice flour:

  • Milk: 4 cups

  • Rice flour: 4 heaping tablespoons

  • Sugar: 4 tablespoons

  • Water: half a teacup

  • Rosewater: half a teacup

  • Ground cardamom: half a teaspoon

  • Saffron extract: for decoration

  • Cinnamon: for decoration

  • Pistachio slivers: for decoration

Step-by-step preparation of Fereni with rice flour:

Step 1: To prepare Fereni with rice flour, first pour cold milk into the pot (preferably non-stick) using a standard measuring cup, which can be found in most homes.

Step 2: Next, add the rice flour, water, sugar, and cardamom to the milk and gently stir with a whisk to prevent clumping. Make sure to dissolve the rice flour in cold milk to avoid clumps. If you want your Fereni to have a saffron or chocolate flavor, you can add a little saffron or cocoa powder when adding the rice flour.

Step 3: After adding the ingredients, stir well until the rice flour and sugar dissolve in the cold milk. Place the mixture over low heat and stir continuously. If you stop stirring even for a moment, the rice flour will clump together in the milk.

Step 4: Stir the Fereni regularly until it thickens. Once thickened, add the rosewater and continue stirring until the desired consistency is achieved. Be careful that when it cools, it will thicken, so it should not be too thick or too runny when you remove it from the heat.

Note: If your Fereni accidentally burns at the bottom, avoid stirring the ingredients from the bottom of the pot. Stir only the mixture that is about 2 millimeters above the bottom of the pot.
