Healthy Cauliflower Sausages

Ingredients:

  • 1 medium sautéed onion

  • 150 g chopped cauliflower

  • 100 ml chicken broth

  • 1 egg

  • A pinch of thyme

  • A little olive oil for sautéing

  • 1 tablespoon onion

Instructions:

  1. Wash the chicken, remove the skin, and pat dry with a paper towel. Cut into 1–2 cm pieces.

  2. Chop the cauliflower in a food processor.

  3. Sauté the onion and cauliflower in olive oil over heat until translucent. (Optionally, steam and puree the cauliflower separately and sauté the onion alone.)

  4. Add the chicken and vegetables to the food processor.

  5. Add the egg, salt, pepper, and other seasonings, and blend until smooth.

  6. To shape the sausages, use sausage-making plastic casings. Fill the casings with the prepared mixture, twist both ends, and tie with kitchen twine.

  7. Place the sausages in a pot of boiling water and cook according to thickness:

    • Thin sausages: 15 minutes

  • 2 medium onions

  • 1 stalk leek (approx. 250 g)

  • 1 egg

  • 50 ml water

  • 1 pinch thyme

  • 1 teaspoon salt

  • ¼ teaspoon black pepper

  • 1 pinch fenugreek seeds

  • 2 tablespoons olive oil

  • 1 teaspoon hot spice mix

Instructions:

  1. Heat the olive oil in a pan and add the fenugreek seeds, sautéing briefly.

  2. Add the chopped onions and leeks and sauté until soft and translucent.
