According to Saed News’ Cooking Service, luxurious fried onions—also known as crispy onions—are commonly used to garnish a variety of dishes such as ash reshteh (Persian noodle soup) and kashk-e bademjan (eggplant with whey). Achieving perfectly caramelized crispy onions only requires a few simple but essential steps during preparation.

After chopping the onions, place them in a pot of boiling water for 5 minutes. Then remove them, drain, and allow them to dry completely. (Once dried, the onions should appear glassy and translucent.)

Next, add the dried onions to a large pan with plenty of oil, ensuring they are fully submerged. A key tip: always use oil specifically meant for frying. Regular liquid cooking oil will be absorbed by the onions, making them soft instead of crispy.

Once the onions turn slightly golden, quickly remove them from the oil. Place them on a wire rack to drain any excess oil. After they have cooled, pack the onions and store them in the freezer for future use.
