You may be hearing the name “Queen Kebab” for the first time, but you should know that this is a delicious and savory skillet-style kebab served with vegetables. The combination of meat and eggplant makes Queen Kebab an appealing dish for family gatherings, and its elegant, eye-catching presentation ensures it draws everyone’s attention.

1 large onion
2 large carrots
2 potatoes
2 slender eggplants
1 bell pepper
Vegetable oil, as needed
400g ground meat
1 tablespoon chickpea flour
Salt, black pepper, and turmeric, to taste
Prepare the meat mixture:
Grate the onion finely and place it in a suitable bowl, then add the ground meat. Grate the bell pepper and add it to the bowl along with a pinch of salt, black pepper, turmeric, and chickpea flour.
Mix thoroughly:
Knead the ingredients as you would for koofteh (Persian meatballs) until the mixture is smooth and cohesive. Cover the bowl with plastic wrap and refrigerate for 1 hour to enhance the mixture’s stickiness.
Fry the kebabs:
After an hour, remove the mixture from the fridge. Heat a pan over medium heat and add some vegetable oil. Scoop portions of the mixture and shape them into rounds, like small patties, then fry until golden. Using a round mold at this stage can help achieve a more elegant shape. Repeat with the remaining mixture and set aside.
Prepare the vegetables:
Slice the eggplant, carrots, and potatoes into rings. If you used a mold for the meat, you can also use it to cut the vegetables into perfect rounds. Sauté the vegetable rings in a little oil until golden and tender.
Assemble the kebabs:
Stack a carrot ring, a potato ring, a piece of kebab, and an eggplant ring on top of each other, and secure them with a toothpick. You can also add an olive on top of each toothpick for extra decoration.
For a more visually appealing presentation, garnish with a cherry tomato or a few peas on top.
Drizzle with a bit of sauce or sprinkle with cheese for added flavor.
