Bruschetta is usually served as a snack or appetizer. Below, we explain how to make this light, tasty, and very easy-to-prepare starter.
Ingredients for Bruschetta
Large tomatoes: 4
Olive oil: as needed
Fresh chopped basil: 100 g
Fresh chopped parsley: 100 g
Parmesan or mozzarella cheese: 300 g
Crushed garlic: 5 cloves
Thyme: 1 tablespoon
Spring onions: 100 g
Salt and pepper: to taste
Thick slices of toast or baguette: 10
Preheat the oven to 180°C (356°F).
Finely chop the tomatoes and spring onions, then mix with olive oil, thyme, parsley, basil, salt, and pepper. Stir well.
If using a baguette, slice it diagonally about 2 cm thick.
Brush both sides of the bread with olive oil and rub the crushed garlic over it.
Arrange the bread slices on a baking tray, spoon the tomato mixture on top, and sprinkle with grated Parmesan cheese.
Place the tray in the oven and bake for 10 minutes until the bread is lightly toasted.
Garnish with a few fresh basil leaves before serving.
Tips:
Italian basil (basilico) has a stronger aroma and flavor; use it if available.
Bruschetta can also be made with ham, beans, cream cheese, feta, or various vegetables.
If basil isn’t available, parsley can be used instead.
Be cautious with adding salt, as the cheese is already salty.
You can omit butter and use only olive oil if preferred.
Toasted bread slices are a suitable alternative to baguette.
