Ingredients:

  • Cocoa milk: 4 cups

  • Sugar: ½ cup

  • Cocoa powder: ½ cup

  • Gelatin powder: 3 tablespoons

  • Chocolate bar (dark or sweet): 50 grams

  • Breakfast cream: 100 grams

  • Vanilla: ½ teaspoon


Preparation:

  1. Mix gelatin powder with 3 tablespoons of cold water and melt it using a double boiler until it becomes clear.

  2. In a pot, combine cocoa milk, cocoa powder, sugar, and vanilla. Heat over medium heat, stirring constantly until the sugar dissolves and the mixture is hot and slightly steaming. Avoid boiling.

  3. Once steaming, remove from heat and add the chocolate bar at room temperature, letting it slowly melt.

  4. Pour a ladle of the dessert mixture into the cream and stir until fully incorporated, then add it back into the pot.

  5. Add the dissolved gelatin and stir until smooth. Strain the mixture to remove impurities.

  6. Pour the mixture into the desired mold and refrigerate for 5 hours until set.


Serving Tips:

  • Remove the dessert from the refrigerator and let it sit for 5 minutes before unmolding.

  • Run a sharp knife around the edges to release it from the mold. Silicone molds are easiest, while metal, plastic, or cast iron molds may require a brief immersion in hot water.

  1. Gelatin is colorless and tasteless, derived from animal collagen. Always dissolve gelatin using the double boiler method. Avoid high temperatures to prevent unpleasant odors. One tablespoon of gelatin powder equals four gelatin sheets. Store gelatin in a sealed, cool, dry place, and use within 6 months of opening.

  2. For a sweeter taste, use sweet chocolate bars. If you prefer less sweetness, opt for dark chocolate, as the dessert mixture already contains sugar.
