Ingredients for Rice Flour Halva:
6 tablespoons of rice flour
50 grams of butter
1/3 cup of vegetable oil
2-3 tablespoons of strong saffron tea
12 tablespoons of sugar
7 cups of water
5 tablespoons of rose water
Instructions for Preparing the Halva:
Sautéing Butter and Rice Flour: In a pot, add the butter and vegetable oil, and heat over low flame until the butter melts. Then, add the rice flour and sauté for 7-8 minutes over low heat until the raw taste of the flour disappears and it turns a light coffee color.
Tip: You can substitute butter with local oil. Tip: If you prefer a darker halva, sauté the flour and oil a bit more.
Adding Water: Gradually add the water and whisk well with a hand whisk to break up any flour clumps.
Adding Sugar: Once the water starts to boil, add the saffron, sugar, and rose water, stirring continuously.
Tip: You can use powdered sugar or rock candy instead of regular sugar. Tip: Keep stirring to prevent it from sticking to the bottom.
Let the halva simmer for about 20 minutes until it thickens.
The consistency of the halva depends on your personal taste. It should resemble the consistency of a thick porridge.
Once done, remove from heat, pour it into a serving dish, and garnish with your preferred nuts.
