Cocoa powder: 60 g
Sugar: 180 g
Olive oil or vegetable oil: 55 g
Vanilla: 1/2 tsp
Eggs: 2
All-purpose flour: 140 g
Baking powder: 1 tsp
Salt: 1/4 tsp
Nutella or chocolate chips: 90 g
Powdered sugar: As needed
Preparation:
Bring all ingredients to room temperature and measure them accurately using a kitchen scale. Preheat the oven to 180°C (356°F).
Prepare the Dough:
Sift together the flour, baking powder, and salt three times in a bowl and set aside.
In another bowl, sift the cocoa powder, add sugar, eggs, and vanilla, and whisk until well combined.
Add the oil and mix well. Gradually incorporate the sifted dry ingredients into the wet mixture. Use a spatula to gently mix the dough without over-kneading.
Chill the Dough:
Place the dough in a plastic wrap or bag and refrigerate for 2 hours to firm up.
Shape the Cookies:
Divide the dough into 9 equal portions. Shape each portion into a ball, flatten slightly, and place a piece of Nutella or firm chocolate inside. Reshape into a ball and roll it in powdered sugar.
