Saed News: "Barberry rice with chicken" is a delicious and classy dish that graces Iranian party tables and is very easy to prepare.
1 tablespoon tomato paste
1 tablespoon pomegranate paste
1 tablespoon water
1 tablespoon oil
Salt
5 chicken thigh fillets
1 onion
3 cloves of garlic
Salt, black, pepper, turmeric, garlic powder
Brewed saffron
1 cup barberries (zereshk)
1/3 cup pistachio slices
1/3 cup almond slices
1 teaspoon sugar
1 tablespoon butter
Place the chicken meat, onion, garlic, and spices in a food processor and blend well. Then form small meatballs and fry them in oil. Halfway through frying, add the brewed saffron to enhance the color and aroma.
Once the meatballs are fried, remove them from the pan. In the same pan, sauté the tomato paste until it changes color. Then add water, followed by pomegranate paste and salt. Mix everything well, and add the meatballs back to the pan. Stir to coat the meatballs in the sauce evenly.
In another pan, melt the butter and add the barberries, a little sugar, and sauté on low heat. After about 30 seconds, add the pistachio and almond slices. Remove from heat promptly to avoid overcooking and burning the barberries.
Finally, add this mixture to the meatball and sauce combination, mix well, and your dish is ready.
Prepare saffron rice, and when serving, top with the barberry and meatball mixture. I promise you, this will be one of the most delicious barberry rice dishes you've ever had!
