According to Saednews' cooking service, raisin cookies are one of the traditional Iranian sweets that have many fans and are also distributed as religious offerings during special occasions. Raisin cookies are considered one of the sweets known for festive events, much like Yazdi cake, and are therefore used for serving at religious occasions. This delicious cookie can be baked to your preference, either soft or dry.

Ingredients for Making Raisin Cookies

  • 1 cup of pastry flour

  • 1 egg

  • ⅔ cup of powdered sugar

  • 75 grams of butter

  • ¼ cup of plump raisins

  • ¼ teaspoon of vanilla essence

Method for Making Raisin Cookies

Step 1
To prepare the raisin cookies, first take the butter and egg out of the fridge and let them come to room temperature. Then, select a large bowl, add the butter along with powdered sugar and vanilla essence, and mix well until smooth.

Step 2
Continue mixing the butter, powdered sugar, and vanilla essence until a cream-colored dough forms. Once the ingredients are well mixed, add the egg and mix again until fully combined.

Step 3
Sift the flour twice, then slowly add it to the mixture, mixing on low speed. Mix the flour into the dough only until the ingredients are fully combined.

Step 4
Once the flour is well mixed with the dough, add the plump raisins. Clean the raisins and remove any unwanted pieces, then soak them in cold water for 20 minutes.

Add the raisins to the dough and gently mix to ensure the raisins are evenly distributed throughout. It's a good idea to preheat the oven to 160°C (320°F) for 15 minutes before the dough is ready so that you don’t have to wait for the oven to warm up.

Raisin cookies are known to stick to the baking tray, so it's best to line the tray with parchment paper. If you don’t have parchment paper, you can grease the tray with cake release spray to prevent the cookies from sticking after baking.

After preparing the baking tray, use a piping bag or a spoon to drop the dough onto the tray with some space between each cookie. The dough will be slightly raised, but it will spread out on its own over time, so there’s no need to flatten them.

Once all the dough is placed on the parchment paper, put the tray in the oven for 10 to 15 minutes until the cookies are ready. You don’t need to open the oven door to check them.

Once the edges of the cookies turn golden, you can remove them from the oven. Since raisin cookies are fragile and may crumble, wait for them to cool before collecting them.

If you prefer your raisin cookies to be dry, you can add a little more flour. Also, to prevent them from sticking to the tray, make sure the edges of the cookies turn brown before taking them out of the oven.
