However, its origins date back to 850 AD, when the famous physician and scholar, Razi, described the properties of almonds and their paste. Later, at the end of the Crusades, this delicious dough was brought from the East to Europe.

This paste is very flavorful and is often used as a substitute for cream when decorating cakes and pastries. Marzipan is popular worldwide because it is quick to prepare, comes in many varieties, and requires only three main ingredients. It also makes an excellent alternative to commercial fondants. You can shape marzipan into different fruits and coat them in chocolate, or create various flowers and figurines for cake decoration. Ingredients for Decorative Marzipan Cake Paste

  • Food coloring, as needed

  • 1 tsp bitter almond extract

  • 5 tbsp honey

  • 500 g powdered sugar

  • 500 g sweet almonds or peanuts

Method for Making Decorative Marzipan Paste

  1. Place almonds in boiling water and leave for 5 minutes, then peel off their skins. Dry the peeled, white almonds completely.

  2. Grind or blend the almonds into a smooth paste. Add powdered sugar and bitter almond extract and mix thoroughly.

  3. Dissolve the honey in half a cup of hot water, then add it to the almond mixture. Knead the dough by hand until smooth and ready.

You can tint the marzipan with food-safe colors as desired. Store the dough in a freezer bag until use (for decorating cakes). To prevent drying, keep it in the refrigerator and use it within a few days.

  • 1.5 cups sugar

  • 1 egg white

Method for Making Marzipan Dough – Method 2

  1. Peel the almonds, or use ready-made almond kernels. Soak the almonds in water overnight, then peel and drain on a cloth until completely dry. Grind the almonds using a food processor or grinder.

  2. Whisk the egg white with sugar until well combined. Add the ground almonds and mix thoroughly. For convenience, you can mix in a food processor with a dough blade until smooth. Knead the dough lightly after shaping.

  3. Shape the dough into a cylinder and store in a freezer bag or plastic wrap. The marzipan is now ready for immediate use or can be refrigerated. Remove it 15 minutes before use for decorating cakes and pastries.
