Saed News: Ash Shorba is the only type of ash (Persian thick soup) that is prepared without using legumes.
According to Saed News Cooking Service, to prepare Ash Shorba with mini meatballs, a legume-free Persian thick soup, the following ingredients are needed:
Broken rice (from northern Iran): 1 cup
Dried dill: 2 tablespoons
Vegetable oil: 2 tablespoons
Water: 5 cups
Ground red meat: 200 grams
Small onion: 1
Small potato: Half
Chickpea flour: 2 tablespoons
Dried mint: 1 tablespoon
Salt, turmeric, and red pepper: As needed
To prepare this dish, pour the broken rice into a pot and add 3 cups of water, dried dill, and salt. Once the water is absorbed, add more water gradually until the rice is fully cooked and softened.
Grate the onion and half a potato. Mix them with the ground meat, 1 tablespoon of chickpea flour, 1 tablespoon of dried mint, a bit of salt, pepper, and turmeric to form the mixture for the meatballs.
Once the rice is fully cooked and mashed, drop the mini meatballs into the pot and allow enough time for the dish to cook thoroughly and the flavors to blend well.
