How to Make Baku Qoymaq – A Special Azerbaijani Kachi With An Irresistible Aroma and Color

Baku Qoymaq Recipe

Qoymaq or Kachi is a complete meal or a very delicious and nutritious dessert, especially useful for women who have recently given birth, are menstruating, or are feeling weak. Kachi is prepared in various ways, and today we will make it the way the people of Baku, Azerbaijan, do.

Ingredients for Baku Qoymaq

  • Half a cup of wheat flour

  • 50 grams of butter

  • A pinch of turmeric

  • A little brewed saffron

  • 2 cups of water

  • 1/3 cup of sugar

  • A pinch of cinnamon powder (for serving)

Instructions:

  1. Sautéing Butter and Flour: Start by placing the butter in a non-stick pan and heating it over low heat until it melts. Then, add the flour and sauté it for 2-3 minutes until the raw smell is gone and it begins to smell good. Add turmeric and continue sautéing, then add the sugar and stir.

  2. Adding Water: Gradually add cold water to the mixture while stirring to prevent clumping, making sure everything becomes smooth. Then, add the brewed saffron and stir well.

  3. Cooking the Kachi: Cover the pan and do not stir anymore. Let it cook until all the water evaporates, and a crust forms at the bottom.

  4. Rolling the Kachi: Once all the water is evaporated, use two spoons to roll the Kachi from one side of the pan.

  5. Serving Baku Kachi: Transfer the Kachi to a serving dish, sprinkle cinnamon powder on top, and serve it with a fresh cup of tea.
