Chickpeas: 1 cup
Onion: 1
Potato: 1 large
Garlic: 3 cloves
Eggs: 2-3
Ground coriander and cumin: ½ teaspoon each
Salt and black pepper: to taste
Turmeric and oil: as needed
Instructions for making Chickpea Kofta:
Step 1:
To make delicious and simple Chickpea Kofta, start by soaking the chickpeas in a bowl of water overnight. If possible, change the water a few times to remove any gas from the chickpeas.
Step 2:
Drain the soaked chickpeas and place them in a suitable pot with 2 cups of water. Peel the potato and add it to the pot. Place the pot on the stove.
Step 3:
It will take about an hour to cook the chickpeas, although some chickpeas may take longer, around 1.5 hours. Once the chickpeas and potatoes are cooked, drain them.
Step 4:
Place the cooked chickpeas and potatoes in a food processor or blender and blend until smooth and well-mixed. Transfer the mixture to a suitable bowl to cool down.
Step 5:
Grate the onion and squeeze out any excess water. Grate the garlic and add it, along with the squeezed onion and eggs, into the bowl with the chickpea and potato mixture.
Step 6:
Add ground coriander, cumin, turmeric, salt, and black pepper to the bowl, and mix everything well. If the mixture seems too loose, add some breadcrumbs to thicken it.
Step 7:
Cover the bowl with plastic wrap and refrigerate for an hour to allow the mixture to rest. After the hour, remove the bowl from the fridge and heat a suitable pan.

Add some oil to the pan and let it heat. Then, take a small portion of the mixture (about the size of a small tangerine) and shape it into a round ball. Flatten it slightly and place it in the pan.
Step 9:
Allow one side of the kofta to fry, then flip it to cook the other side. Continue frying the rest of the mixture in this way, then arrange the koftas in a serving dish and serve with your choice of garnish.
