Australian Kuku is a popular dish known for its simplicity and flavor. The main ingredient is eggs, and various vegetables and seasonings—such as herbs, onions, garlic, bell peppers, mushrooms, potatoes, and spices—are commonly used. Kuku is usually shaped flat and round or oval. Here’s a step-by-step guide to making Australian Kuku at home.

Ingredients

  • 3 potatoes

  • 2 colorful bell peppers (red, yellow, or green)

  • 1½ cups shredded pizza cheese

  • 1 cup parsley

  • 1 onion

  • 2 garlic cloves

  • 3 eggs

  • 3 tablespoons flour

  • Salt, black pepper, turmeric, paprika, and dried mint, as needed

Instructions

  1. Peel the potatoes and grate them finely. Place the grated potatoes in a sieve to remove excess water, then transfer to a bowl.

  2. Peel the onion and dice it finely. There’s no need to grate it—small cubes work best.

  3. Dice the bell peppers into small cubes. Wash, clean, and finely chop the parsley. Peel the garlic and either grate or mash it. (If you prefer a milder taste, you can use a small amount of garlic powder instead.)

  4. In a large bowl, combine the potatoes, onion, bell peppers, parsley, garlic, spices, cheese, and flour. Mix well.

  5. Add the eggs and stir until fully incorporated, creating a smooth, uniform mixture.

  6. Heat a small amount of oil in a pan over medium heat. Using a spoon, place portions of the mixture into the pan and shape them as desired. Cook until golden on one side, then flip carefully to cook the other side until golden and cooked through.

  7. Remove the cooked Kuku and place on a paper towel to absorb excess oil. Serve hot with fresh bread.

Tips for the Best Australian Kuku

  • Fry the Kuku over medium heat to ensure it cooks through.

  • You can use just one color of bell pepper if preferred.

  • Adding pizza cheese is optional, but it elevates the flavor. Adjust the salt accordingly, as the cheese adds some saltiness.
