Using Onions

As mentioned, frying onions in animal fat oil helps eliminate the smell. Fry chopped or grated onions in the oil and strain it before using the oil for cooking soupy dishes like broth or stew.

Using Dried Lime and Spices

Another method to remove the smell of animal fat and oil is by using dried lime and aromatic spices such as ginger, coriander seeds, and black pepper in stews and broths.

Using Cinnamon

Cinnamon is one of the best spices to eliminate the smell of animal fat and oil in stews and soupy dishes. In addition to removing the odor, cinnamon enhances the flavor of the dish. However, for stews like gheymeh, using ground cinnamon can alter the taste. Instead, use cinnamon sticks and remove them after half an hour to eliminate the smell.

If the smell is too strong, place a few cinnamon sticks in the oil and heat it in another container. Turn off the heat and let the oil cool. Remove the cinnamon sticks once the oil is cold.

Chef's Tips

In response to some user inquiries about removing the smell of animal fat from broth, if the meat contains animal fat, it's best to use plenty of onions and dried lime to eliminate the smell.

If there's a lot of animal fat, boil the meat in a pot with water to remove the foam, which affects the taste. After a few minutes, strain the meat, rinse it with warm water, and then cook it with onions, chickpeas, and other ingredients in boiling water.

If using animal fat or oils for the first time, gradually add them to your food to get accustomed to the smell and taste. Avoid using animal fat or oils when hosting guests, as they might not enjoy the taste.
