Ingredients:

  • Pomegranate juice: 1 cup

  • Cornstarch: 2 tablespoons

  • Sugar: 1 cup (or to taste)

  • Water: 1 cup

  • Rosewater: 1 tablespoon

  • Pomegranate seeds (for garnish)

  • Chopped pistachios (optional, for garnish)

Instructions:

  1. Prepare the Pomegranate Juice:

    • If you are using fresh pomegranate juice, extract the juice from pomegranate seeds using a juicer or blender. You should have about 1 cup of juice.

  2. Mix the Ingredients:

    • In a saucepan, combine 1 cup of pomegranate juice, 1 cup of water, and 1 cup of sugar. Stir to dissolve the sugar and heat over medium heat.

  3. Make the Masghati Base:

    • In a small bowl, mix the cornstarch with a little water (about 2-3 tablespoons) to form a smooth slurry.

    • Slowly pour the cornstarch mixture into the saucepan with the pomegranate juice and water while stirring constantly to prevent clumping.

  4. Cook the Mixture:

    • Continue cooking the mixture over medium heat, stirring constantly, until it thickens to a pudding-like consistency. This may take about 10-15 minutes.

  5. Add Rosewater:

    • Once the mixture thickens, add the rosewater for a fragrant aroma and stir to combine.

  6. Set the Masghati:

    • Pour the thickened mixture into a flat dish or individual serving cups. Smooth the top with a spatula.

    • Let it cool to room temperature and then refrigerate for a few hours to set and firm up.

  7. Garnish and Serve:

    • Once the masghati has set, garnish with pomegranate seeds and chopped pistachios (optional).

  8. Enjoy!
