Ingredients for Tabriz Coriander Soup:

  • 50 grams butter or olive oil

  • 1 large onion

  • 3 large carrots (grated)

  • 1 teaspoon turmeric

  • ½ teaspoon black pepper

  • 2 cups water

  • 2 cups stock (or vegetable/chicken/meat broth)

  • 1.5 cups rolled oats or peeled barley

  • 1.5 cups fresh chopped coriander

  • 1 teaspoon salt

  • 1 head of garlic

  • 2 cups yogurt

Ingredients for Leek and Red Lentil Soup:

  • 3 leeks

  • 1 medium onion

  • Some olive oil

  • ½ tablespoon sugar

  • 1 medium potato

  • 1 medium carrot

  • 2 garlic cloves

  • 1 cup red lentils (soaked)

  • 6 cups cold water

  • 2 cups bone broth

  • 1 lemon

  • 1 teaspoon salt

  • Some black pepper

  • ½ teaspoon turmeric

  • A pinch of crushed cumin (optional)

For garnish:

  • 1 tablespoon butter

  • 1 tablespoon red pepper or paprika
