Saed News: This is the authentic recipe for Haleem Bademjan, which is incredibly delicious and elegant, and also a healthy and nutritious dish for Suhoor and Iftar.
According to the Cooking Service of Saed News, the video tutorial for traditional Isfahani Haleem Bademjan has been selected from YouTube, Hiva Sandwiches, and is provided for you.
This is the authentic recipe for Haleem Bademjan with one difference: the color of Isfahani Haleem Bademjan is yellow and light because the eggplants are not fried but steamed (although you can also grill them). However, I preferred to fry them.
Ingredients:
4 medium eggplants
300 grams of bone-in meat (you can use neck or, more economically, sheep’s kidney)
1 cup of half-grain rice
2 large onions
Meat cooking spices (salt, pepper, turmeric, cinnamon stick, garlic, onion)
Spices after cooking the meat (cardamom, dried rose petal powder, cinnamon powder, coriander seeds, pepper)
Saffron infusion as needed
4-5 full tablespoons of kashk (fermented whey)
