Ingredients for Lima Bean Stew:

  • 1 cup of lima beans

  • 1 onion

  • 5-6 mushrooms

  • 1 medium potato

  • 1 tablespoon tomato paste

  • Salt, black pepper, turmeric, paprika, and garlic powder to taste

  • Vegetable oil as needed

  • 2 tablespoons fresh lemon juice

  • 1 chicken or meat stock cube

How to Make Lima Bean Stew:

Step 1:
To make lima bean stew, wash the lima beans and soak them in water the night before. Change the water several times during the soaking process to remove any impurities and help the beans cook faster.

Step 2:
Drain the lima beans and place them in a pot. Add 3 times the amount of water to the beans and set the pot on high heat. Once the water starts boiling, skim off the foam from the surface, reduce the heat, and let the beans cook.

Step 3:
In a pan, add some vegetable oil, chop the onion finely, and sauté until it becomes soft and golden. Then, add the sliced mushrooms and sauté together until the mushrooms soften. Add salt, pepper, turmeric, and tomato paste, and sauté everything together. Remove the fried onions from the heat.

Step 4:
Now, add the fried onions and chicken or meat stock to the cooking beans and stir. Peel and dice the potato into small cubes and add it to the lima bean stew.

Step 5:
Let the stew simmer on low heat and cook until everything is well mixed. Towards the end of cooking, taste the food for salt and adjust the seasoning. After about 3 to 4 hours, the stew will become thick and ready to serve. Add fresh lemon juice to the stew and enjoy your meal!
