Ingredients for Stuffed Potatoes:

  • 8 potatoes

  • 300 grams of ground meat

  • 1 onion

  • 1 clove of garlic

  • Salt and pepper to taste

  • 1 bell pepper

  • 10 mushrooms

  • 2 tomatoes

  • Mozzarella cheese (as needed)

Ingredients for the Sauce:

  • 2 cups of water

  • 2 tablespoons of tomato paste

  • Salt and pepper to taste

Instructions:

  1. First, peel the potatoes and use a spoon or a special tool to hollow out the center. Heat some oil in a pan and fry the potatoes in hot oil until they are well-cooked and golden brown.

  2. Next, prepare the filling. Finely chop the onion and sauté it in a pan. Once softened, add the minced garlic and ground meat, seasoning with salt and black pepper. Sauté until the meat changes color.

  3. Add the sliced mushrooms and diced bell pepper, sautéing until the mushroom's water evaporates. Finally, finely chop the tomatoes into small cubes and cook them with the mixture until everything becomes soft and well-combined.

  4. Stuff the hollowed-out potatoes with the prepared filling, pressing them down well to ensure they don’t spill during cooking.

  5. Grease a baking dish and arrange the stuffed potatoes inside. Sprinkle mozzarella cheese on top.

  6. Prepare the sauce by mixing the ingredients and simmering for a bit until slightly reduced. Pour the sauce over the potatoes, ensuring it covers the bottom of the baking dish.

  7. Preheat the oven to 180°C (350°F) and bake the stuffed potatoes for 30 minutes until fully cooked.
