Saed News Cooking Service: Here’s a recipe for a decorative cucumber and carrot jam, with important tips on how to make it!

Ingredients for Cucumber and Carrot Jam:

  • 500g cucumber

  • 500g carrot

  • 500g sugar

  • 2 tablespoons culinary lime

  • 2 cups water

  • 3-4 cardamom seeds

  • 2-3 tablespoons rosewater

  • Toothpicks (as needed)

  • Few drops of green food coloring

  • 1 tablespoon lemon juice (or ¼ teaspoon citric acid)

Cucumber and Carrot Jam Recipe:

Step 1:
To make this decorative jam, start by peeling the carrots and slicing the cucumbers with the skin on into long, thin layers using a peeler.

Step 2:
Roll the slices into rose shapes. You can roll them, alternating inside and outside, or make small cuts on the edges before rolling them to form a flower shape. Secure with toothpicks.

You can also prepare cucumbers and carrots separately or layer them together for a two-toned flower.

If rolling the slices is difficult, sprinkle some salt on them to soften them or soak them in salted water for a few minutes.

Step 3:
Mix 2 tablespoons of lime with 1 liter of water and stir well. Let it sit for about 30 minutes until the lime settles to the bottom. Carefully separate the clear water into another container, without disturbing the sediment.

Place the flowers in the lime solution for 12 hours to harden.

🌟Note: If the flowers are not placed in the lime solution, they will lose their shape while cooking.

Step 4:
After 12 hours, remove the flowers from the lime solution and soak them in fresh water for 15 minutes. Change the water three times to remove the lime completely.

Step 5:
In a pot, combine water and sugar, heating gently until the sugar dissolves and the syrup thickens. Add a few cardamom seeds to release their fragrance.

Once the syrup is thickened, add the flowers and let them cook on low heat for about 30 minutes.

🌟Tip: If the jam is not cooked properly, it will mold in the fridge.

Final Step:
After 30 minutes, add rosewater and lemon juice. Let it boil for a few more minutes before removing the carrots from the syrup. Add green food coloring to the cucumber jam for a vibrant color.

Leave the combined cucumber and carrot flowers without food coloring.

Keep the jam in your kitchen for 24 hours, covering it with a cloth. After a day, remove the toothpicks, transfer the jam to a suitable container, and store it in the fridge.
