Cutlet is a popular Iranian dish prepared with a wide range of recipes and ingredients, and it is rare to find someone who does not consider this delicious dish as one of their favorites. If you are restricted from consuming red meat, you can make the cutlet with chicken instead.
How to Make Delicious and Unique Chicken Koukou (Koukou Morgh)
Ingredients for 4 people:
Chicken meat: 500g
Onion: 1 large
Garlic: 2 cloves
Colorful bell pepper: 2 tablespoons
Brewed saffron: 2 tablespoons (thick)
Butter: 20g
Salt and black pepper: to taste
Red pepper and oil: to taste
For the second method:
Potatoes: 2
Egg: 1
Instructions:
Step 1:
First, peel and wash the onions and garlic. Grate them finely or put them in a food processor and mix until smooth. Drain the juice completely.
Step 2:
Grind the chicken pieces (preferably using a mix of thigh and breast for the right texture). Grind it twice or use a food processor until it becomes sticky, then place it in a large bowl.
Step 3:
Add the grated onion and garlic mixture to the ground chicken. Take about 1/3 of each colored bell pepper and finely chop it on the chopping board, which will be around 2 tablespoons, and add it to the mixture.
Step 4:
Now, add brewed saffron, red pepper, black pepper, and a pinch of salt to the mixture. Mix everything thoroughly with your hands, knead it well until everything is well combined. Then, cover the bowl with cling film and refrigerate it.
Step 5:
Second method: For this method, use potatoes and eggs. Peel and wash the potatoes, grate them finely, and squeeze out the excess water. Add them to the chicken mixture.
Step 6:
Crack the egg into a bowl and whisk it with a fork if it's intact, then add it to the mixture. Knead everything together until it becomes firm and smooth. Cover the bowl with cling film.
Step 7:
Refrigerate the mixture for 1 hour to allow the cutlet mixture to rest. Then, heat a pan over low heat, add butter and a little oil, and let it heat up.
Step 8:
Take the bowl of cutlet mixture out of the refrigerator. Shape the cutlets in your desired form using your hands, and place them into the hot oil. You can also use molds if you prefer.
Step 9:
Once one side of the cutlets is fully fried, turn them over to fry the other side. You can spray some saffron on them while frying for added color and flavor.
Step 10:
After frying the cutlets, place them on a paper towel to absorb any excess oil. Then, arrange them on a plate and garnish with pickles, tomatoes, olives, etc. Enjoy!
Notes for Chicken Cutlet:
For Fried Chicken Cutlet: In addition to the ingredients listed above, you will need one cup of white flour, one cup of breadcrumbs, and 2 eggs.
Step 1:
Place the white flour and breadcrumbs into two separate bowls.
Step 2:
Crack the eggs into a bowl and whisk them with a fork. If you like, you can add your favorite spices to the breadcrumbs.
Step 3:
Shape the cutlets and dip them first into the white flour, then into the beaten egg, and finally coat them with breadcrumbs. Fry them in hot oil until they are completely fried.
Step 4:
Make sure to use enough oil in the pan so the cutlets float while frying. After frying, use paper towels to remove any excess oil.
