🍗🍗 Steps to Make Chicken Stew:

🍗Step 1: Sauté the Onions and Add Turmeric
First, finely chop the onions and sauté them in a pot with some oil until the onions soften and turn translucent. Then add some turmeric and continue sautéing until the onions and turmeric are well combined.

🍗Step 2: Fry the Chicken Pieces
Next, add the chicken pieces to the pot and fry both sides until they turn golden brown. Each side of the chicken should be fried for about 4 to 5 minutes until golden.

🍗Step 3: Add Carrots and Tomato Paste
Once the chicken is fried, cut the carrots into rings and add them to the pot. Sauté the carrots for about 1 to 2 minutes, then add the tomato paste and sauté until it darkens and releases its color.

🍗Step 4: Important Tips for Sautéing Tomato Paste and Adding Spices
An important tip for tomato paste is to sauté it to remove its raw taste and to give the stew a better color. Add some salt and black pepper to the stew at this stage.

🍗Step 5: Add Water and Cook the Chicken
Next, add 3 cups of water to the pot, increase the heat to bring the water to a boil, then reduce the heat to allow the chicken to cook. Cooking the chicken on low heat will take about 1 to 1.5 hours.

🍗Step 6: Add Saffron for a Better Color
Adding saffron is optional, but if you want the stew to have a deeper color and fragrance, you can add brewed saffron 30 minutes before the chicken is fully cooked.

🍗Step 7: Prepare and Wash the Potatoes
While the chicken is cooking, cut the potatoes into thin slices and wash them in cold water to remove the starch completely. The starch can affect the taste and cause the potatoes to stick together during frying.

🍗Step 8: Fry the Potatoes
Fry the potatoes in plenty of oil. For better flavor, you can sprinkle some black pepper and turmeric on the potatoes while frying. After frying, remove excess oil by using a paper towel or a metal strainer.

🍗Step 9: Crisp the Potatoes and Garnish the Stew
To make the potatoes crispier, you can also fry a few tomatoes along with the potatoes for garnish. If you want the stew to be thicker, let it cook longer until excess water evaporates.

🍗Step 10: Thicken the Stew and Serve
It’s recommended not to thicken the stew too much, so there’s still some liquid left. Once the stew is ready, serve it in a dish and garnish with the fried potatoes, and serve it with barberry rice, dill rice, or plain rice.
