700g potatoes
50g cheddar cheese
1 egg
½ cup chopped sausage
5 or 6 cherry tomatoes, chopped
¼ cup fresh basil leaves
1 cup mozzarella or pizza cheese
Salt and pepper to taste
2 tablespoons oil
Oregano (optional)
Preheat your oven to 220°C (428°F) and allow it to warm up.
Wash and peel the potatoes, then grate them coarsely.
Place the grated potatoes in a cloth (or mesh fabric) and press them to remove as much moisture as possible.
Transfer the drained potatoes to a large bowl. Grate the cheddar cheese and add it to the potatoes. Mix in the egg, salt, and pepper.
Line a baking tray or pizza dish with parchment paper, lightly grease it, and shape the potato mixture into a 30 cm (12-inch) circle on the paper. Smooth the edges with a spoon.
