Qeimeh Kourg:

Ingredients for making Sanandaj Qeimeh Kourg:

  • 1 kg of fresh leeks (tareh)

  • 1 medium onion

  • 700 grams ground meat (beef or lamb)

  • 1 teaspoon salt

  • 1 teaspoon turmeric

  • 1 teaspoon red pepper (optional, for heat)

Instructions:

  1. Prepare the Ingredients:
    Wash the leeks thoroughly and chop them finely. Peel and finely chop the onion.

  2. Cook the Meat:
    In a large pan, add the ground meat and chopped onion. Cook over medium heat until the meat is browned and the onions are soft.

  3. Add Spices and Leeks:
    Add salt, turmeric, and red pepper to the meat mixture. Stir well to combine. Then add the chopped leeks and mix everything thoroughly.

  4. Simmer:
    Cover the pan and let the mixture cook on low heat for about 30 to 40 minutes, stirring occasionally, until the leeks are soft and the flavors have melded.
