Kashk-e Bademjan

Ingredients for Zucchini Kashk with Tomato:

  • Zucchini: 4 to 5 pieces

  • Grated tomato: 3

  • Onion: 1 large

  • Grated garlic: 3 cloves

  • Dried mint: 1 tablespoon

  • Kashk (liquid whey): 2 tablespoons

  • Salt, black pepper, turmeric: as needed


Instructions:

Step 1: Fry the zucchini
First, peel the zucchini and fry them in oil. The size and thickness of the zucchini don’t matter, as they’ll be mashed later. Once fried, remove them from the pan. Peel and finely slice the onion.

Step 2: Add garlic
Sauté the chopped onion in the same pan with some oil. Then add dried mint, salt, spices, and grated garlic. Allow the aroma of the garlic to spread.

Step 3: Mash the mixture
Now add the fried zucchini and grated tomato to the pan. Mash the ingredients together using a potato masher or hand blender.

Step 4: Finish with kashk
