Ingredients for Breakfast Cake
2 cups pastry flour
3 eggs
1 cup sugar
¾ cup vegetable oil
¾ cup sweet creamy yogurt
½ cup raisins
½ cup chopped walnuts
½ teaspoon vanilla extract
1 tablespoon baking powder
A pinch of salt
Important Notes:
The cup used is a standard French cup with a handle.
Wash and dry the raisins beforehand.
Instructions
Step 1 To make the breakfast cake, start by cracking the eggs into a bowl, add the vanilla, and beat with an electric mixer for 2 to 3 minutes. Then, add the sugar and beat on high speed for about 7 more minutes until the mixture is white and creamy.
Step 2 Fold the mixture with a spatula and add the vegetable oil. Mix with the electric mixer for about 30 seconds until the oil is incorporated, then add the yogurt and mix for another 30 seconds.
Step 3 Sift the flour, baking powder, and salt together twice, and for the third time, sift them directly into the breakfast cake mixture. Stir gently with a spatula in one direction until the flour is well incorporated and smooth. Then, add the walnuts and raisins and stir gently to evenly distribute them in the batter.
Step 4 Mix one tablespoon of solid shortening with two tablespoons of flour, and grease the breakfast cake pan or loaf pan. You can also line the bottom of the pan with parchment paper and grease it slightly with solid shortening, eliminating the need for flour.
Step 5 Pour the breakfast cake batter into the pan and spread it evenly with a spatula. Tap the pan on the table a few times to remove any air bubbles.
Step 6 Place the pan in a preheated oven at 180°C (350°F). It will take about 45 minutes for the raisin and walnut breakfast cake to bake. In the final stages of baking, turn on the oven's grill function to brown the top of the cake.
Step 7 Once the breakfast cake is baked, remove it from the oven and let it cool. Then, use a knife to loosen the edges of the cake and invert it onto a serving platter. Slice and serve. Enjoy your meal!
