Ingredients for Baghali Khoshkavij:

  • Fresh fava beans

  • Fresh or dried dill

  • Garlic

  • Salt, pepper, turmeric, and eggs

  • Oil and a little water

Golden Tips:

  • Before adding the fava beans, boil them for 3 to 5 minutes in hot water, then strain and immediately transfer them into a bowl of ice water. This will prevent the bright green color of the fresh beans from changing before you add them to the dish.

  • If fresh dill or garlic isn't available, you can substitute with dried dill and garlic powder.

  • If you're planning to serve Khoshkavij as a stew with rice (either steamed or boiled), be sure to add extra water during cooking. But if you'd rather enjoy it as a thick dish served with bread, omit the water.
